Mrs. Michael Clark, L532 Candelaria Nhl, Albuquerque, par-ticipated in the National Cook-off at Chicago-s LaSalLe Hotel, pitting her original recipe for Huevos Nuevo Mejicano (Eggs New Mexican) against winning entries from 44 states. New Mexicots recently chosen state vegetables, chili peppers and pinto beans, along with good quality eggs are featured in Mrs. CLarkrs recipe. The CLarks have a daughter, Erin 6. Mrs. Clark, the former Miss Marian Woolf, gained good cooking experience on the guest fanch operated by her mother, Mrs. Alice Bartlett, near Cuba, New Mexico. "From this experience, I learned that eggs are handy' econ-omical, and versatiler" Mrs. Clark said. "And I put this knowledge to good use while my husband and I were working toward our degrees at the University of New Mexico. You eat a lot of eggs, fixed in many rdays, when youtre working on a slim budget and a tight timetable." Mrs. Michael Clark represented New Mexico at the National Egg Cooking Contest at the LaSalle Hot€l,Chicago, Illinois, Recipe i s ur*" 4. She also said, "The saying among the students ltas not, what are you going to fix for supper; but, how are you going to fix given your eggs tonight." She won nineteenth place at the contest. The Poultry and Egg National Board is an organization sup-ported financially by the industry and is an educational and pro-motionaL otganization serving producers and processors.
